Traditional restaurants source ingredients for their menus. The Outstanding In the Field team brings their kitchen right to the source – setting their long table in fields, orchards and along the seashores where the meal’s ingredients are harvested. The aim is to reconnect diners to the land while celebrating the hardworking hands that feed us. Outstanding in the Field is part land art installation, part sustainable feast. Since 1999, Jim Denevan and his team have set the table at farms, beaches, vineyards, mountain tops, fishing docks, city streets, and other extraordinary sites around the world. In Vancouver, he set the table alongside the shores of Burrard Inlet in a stunning waterfront park at New Brighton, overlooking the towering mountains and the water. As the meal was prepared in an outdoor kitchen on-site, Denevan led a team of volunteers to create an ephemeral geometric artwork in the centre of the park using pink and yellow string. After the 380 guests had heard from the farmers and fishermen whose ingredients were used in the meal, everyone sat down for a six-course dinner focused on sustainable seafood, prepared by Hawksworth Restaurant.
